Date & Walnut Bars - Mary Roth

Date and Walnut bars cut in diamond shape for a family holiday favorite

Ingredients

  • 3/4 cup unsifted all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 each eggs
  • 1 cup brown sugar, packed
  • 1 cup sliced and chopped dates
  • 1 cup coarsely chopped walnuts
  • 1 tsp vanilla extract
  • confectioners sugar to dust

Instructions

  • Preheat over to 350 degrees
  • Lightly grease and line bottom of a 9x9x2 pan with waxed paper
  • Sift flour, baking powder, salt and set aside
  • In a medium bowl with electric mixer, beat the eggs until light and fluffy
  • Gradually add the brown sugar, beating until smooth
  • Add the dates, nuts, and vanilla. Mix thoroughly.
  • Spread in prepared pan
  • Bake 25 to 30 minutes or until surface springs back when lightly touched with fingertip.
  • Cool slightly, Remove from pan to a wire rack, pulling off the waxed paper on the bottom of the mixture
  • With a sharp knife, cut into 24 bars while still warm. Cut in diagonal direction to make diamonds cookies.
  • To serve dust with confectioners sugar. Makes about 24
